1/2 c butter
1/4 c ricotta
1 t vanilla
1 c sugar
1 egg, beaten
2 c flour, sifted
1/2 t baking soda
1/2 t salt

Directions:
Directions:
Blend butter & ricotta until creamy. Add vanilla, then sugar gradually, beating until well blended.
Add egg & slowly stir in dry ingredients until well blended. Drop by teaspoon onto a lightly greased
cookie sheet. Bake 10 min at 350 degrees.

It makes 30 small cookies, so I often double the recipe.
They aren't supposed to be frosted, but I like the almond frosting on them! :-)
If I'm going to frost them, I shape the dough into balls before baking.
