Broccoli and Provolone Quiche Recipe

3 Cups of Broccoli Florets
3 Tbsp of Olive Oil
2 Cloves Garlic peeled and Minced
1 medium Onion finely Chopped (optional)
1 (9 inch) Pie Crust
4 Eggs Beaten
1 Egg Yolk Beaten
1-1/2 Pints Heavy Cream
Salt and Pepper to taste
1 Cup shredded Provolone Cheese ( shred my own)

1. Pre heat oven to 375
2. Steam Broccoli for about 5 minutes or until tender but firm.
3. Heat the oil in a skillet and saute garlic and onions until tender.
4. Mix in Broccoli and continue cooking another 1-2 minutes.
5. Transfer to pie crust.
6. In a medium bowl, whisk together eggs, egg yolk, and heavy cream.
7. Pour over the broccoli mixture in pie crust.
8. Top with Provolone ( I use extra)
9. Bake 35 minutes or until toothpick inserted comes out clean
