1/2 c. butter (1 stick)
2 eggs
1 tsp. baking soda
1 c. buttermilk
2 c. sifted all-purpose flour
1/2 tsp. salt
1 c. golden raisins
zest and juice of 1 orange
1/2 c. sugar

Directions:
Directions:
Preheat oven to 400. Butter small muffin tins.
Cream the butter and sugar until smooth. Add the eggs and beat until fluffy. Add the baking soda to the buttermilk.
Sift the flour and salt together and add to the butter-sugar mixture alternately with the buttermilk/soda mixture. Stir until well blended.
In a food processor or blender, grind the raisins and orange zest together. Add to the batter and mix in well. Spoon the batter into the prepared muffin tins. Bake approximately 12 minutes or until golden brown and firm to the touch.
Put the tins on baking racks and brush the tops of the muffins with the fresh orange juice and sprinkle with the remaining 1/2 c. of sugar while the muffins are still warm. Cool 5 minutes and remove from pans.

When these are completely cooled they can be cut in two horizontally and small pieces of turkey and a half a tsp. of jelly or cranberry relish may be added for an hors d'oeuvre; other options are ham and mustard, or beef and horseradish sauce.
