Left-over turkey carcass and broth or 4 bone-in chicken breasts
1 bunch fresh broccoli, peeled & chopped
1 chopped onion
Salt & pepper to taste
1 tsp. thyme
2 c. milk
12 T cornstarch

Directions:
Directions:
Strain bones from turkey broth and use for base with turkey pieces, or cook 4 bone-in chicken breasts until meat falls off bones. Dice bite-size. Remove bones from broth and use for base. Add broccoli, onion, salt, pepper & thyme to turkey or chicken and broth and cook for 15 - 20 minutes. Add milk/cornstarch mixture. Cook until thickened. Check taste and add more salt and pepper if needed. Serve.

For the past 5 years or so I have taken this to Marvin & Martha's for our Christmas dinner. On Thanksgiving I usually take the turkey carcass and broth home with me and freeze for the Christmas Broccoli Soup. During the year when I make it I just use the 4 bone-in chicken breast recipe. It has become tradition that we have to have this soup for the Ginn Christmas.
