"When I'm at a Chinese restaurant having a hard time with chopsticks, I always hope that there's a Chinese kid at an American restaurant somewhere who's struggling mightily with a fork."--Rick Budinich
1 C flour 1 C yellow cornmeal 1 C milk, soured (use 1 tsp. vinegar to sour milk) 2 eggs 1/2 C butter 2/3 C sugar 1/2 tsp soda
Melt butter in saucepan, dissolve sugar in butter. Add eggs. Dissolve soda in milk and add to butter. Add flour and cornmeal, stirring till moistened. Pour into greased muffin pan or pie pan. Bake at 375º for 25-30 minutes.
I always doubled the recipe and put it in 2 pie pans or 1 - 9 x 13 pan.
