9 C. freshly ground hard white wheat
3 C. high gluten flour
2 T. Salt
1/2 C. Powdered Milk
1/2 C. Canola Oil
1/2 C. Honey or Sugar (old honey works great!)
2 T. liquid Lecithin ( 1 T. dry) or use 1 C. Oil
3 Eggs
4 C. Hot Water

Directions:

Dissolve 3 heaping Tbsp. yeast in 1 cup very warm water. Put everything in the Bosch mixer adding the last 1-2 cups of flour as needed to clean the sides of the bowl.
Let rise until double. Divide into four or five loaves and place in pans. Let rise until light and dough is to the tops of the pans. (Can be done without raising twice).
Bake at 350 degrees for 25-27 minutes.
Various grains, seeds, nuts, raisins and/or craisins may be added, not to exceed 3 Cups. Cinnamon, nuts and raisins make a great raisin bread. This bread stays soft and moist and freezes well. It is great for sandwiches because its soft and doesn't crumble.
