2-1/2 c flour
1-2/3 c sugar
1-1/4 tsp baking powder
1-1/4 tsp baking soda
1 tsp salt
2/3 c shortening
1/2 c buttermilk or milk
1-1/4 c mashed bananas
1/3 c buttermilk or milk
2 large eggs

Icing:
1 egg white beaten stiff
1 c sugar
4 tbsp water
pinch salt
pinch cream of tartar

Directions:
Directions:
Sift together the flour, sugar, baking powder, baking soda and salt. Add shortening, 1/2 c buttermilk, and bananas. Beat 2 min. Add 1/3 c buttermilk and eggs. Beat 2 more minutes. Bake 30-35 min in 350 oven.

Icing:
Bring sugar and water to a boil until it spins a thread. Beat in egg white. Add pinch salt and cream of tartar. Beat until stiff.
