about 5 dozen baby carrots 1/4 c. plus 1 T. butter, softened 1/4 c. sugar 2 1/2 T. water 3/4 tsp. salt 1/4 tsp. pepper
Scrape carrots. Combine all ingredients in a skillet; cover and bring to a boil. Reduce heat to low and simmer 12 to 18 minutes or until carrots are crisp-tender. Uncover and cook over medium heat 5 minutes or until liquid evaporates and carrots are glazed.
