1 medium onion, chopped
2 tbsp. vegetable oil
1 c. choped cooked ham
1 garlic clove, minced
2 (15-oz.) cans black-eyed peas, rinsed and drained
1 (14-oz.) can chicken broth
1 tsp. rubbed sage
1/2 tsp. dried thyme
1/2 tsp. pepper

Toppings: chopped tomato, sliced green onions, pepper sauce

Directions:
Directions:
Saute chopped onion in hot oil in a medium saucepan over medium-high heat 3 minutes. Stir in ham and garlic, and saute 3 minutes. Stir in peas and next 4 ingredients. Bring to a boil; reduce heat, and simmer, stirring occasionally, 20 minutes.

Serve in a soup bowl with desired toppings. Makes 6 servings.

Found this recipe in Southern Living magazine several years ago. Tastes great with cornbread. Can also be served over rice.
