8 medium red potatoes
11/2 c fresh broccoli florets
1 c fresh cauliflower florets
1 med onion cut in thin wedges
1 small red pepper cut into eights
2 gloves garlic minced
3 tbls olive oil
3/4 tsp salt
1/4 black pepper

Directions:
Directions:
In large bowl, combine all ingredients in order listed. Toss to coat evenly. Spread vegetables in broil pan.

Bake in oven until vegetables are tender and brown. Stir occasionally.
