"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 1/2 to 2 Pounds Lean Ground Beef 1 Large Can Refried Beans 2 Packages Mexican Seasoning Such as Taco, Enchilada, Burrito 2 Cans Enchilada Sauce 1 Package Shredded Cheddar Cheese 1 Package Corn or flour tortillas
Toppings: Salsa Sour cream Tomatoes Lettuce 1 Bag of Tortilla Chips
Brown meat, add seasonings and follow directions on package. Add beans and mix well. Add the other half of the sauce to mixture. In a 13x9 inch pan pour approximately 1/2 can enchilada sauce on bottom of pan to prevent sticking. Place tortillas and arrange to cover pan. Spread some of the meat/bean mixture over tortillas and some of the cheese. Repeat layering until all mixture is used. Finish top layer with cheese and 2nd can of sauce. Bake until completely hot at 350º and cheese is melted. Cut into squares and place on plate, you can top it with the topping if you choose.
