1 1/2 lbs. lean ground turkey
6 Tbsp fresh breadcrumbs
3 Tbsp fresh lemon juice
2 tsp grated lemon peel
2 tsp dried thyme
1 1/8 tsp salt
1/2/ tsp pepper
6 Tbsp soft fresh goat cheese
6 whole wheat hamburger buns

Directions:
Directions:
Combine turkey, breadcrumbs, lemon juice, lemon peel, thyme, salt, and pepper in large bowl. Mix well. Divide turkey mixture into 6 equal portions. Form one portion into two patties. Place 1 Tbsp goat cheese on top of one patty and then top with the second patty and seal edges. Repeat with the remaining 5 portions. (Can be prepared 4 hours ahead. Cover and refrigerate.)
Grill burgers until cooked through, about 5-6 minutes per side. Can top with favorite toppings but especially good with a roasted red pepper relish or olive mixture.

These are a family favorite especially for summer dinners outside on the patio. For a variation, omit the goat cheese and top with sliced Havarti or Monterey Jack cheese during the last few minutes of cooking. Pour the Chardonnay and enjoy!
