1 box frozen chopped spinach
1 8oz cream cheese-cubed
1 8oz pepper jack cheese block-cubed
Jalapeño chopped-to taste
1 Roma tomato-diced and seeded

Directions:
Directions:
Preheat oven to 400º. Thaw spinach in microware and squeeze out the juice. In whatever dish you are going to bake in (pie plate or 8X8) combine spinach, cubed cheeses, jalapenos and 3/4 of tomato together. Don't mix too much, keep it chunky at this stage. Bake covered for 20 minutes. Now stir until everything is combined and smooth. Bake uncovered for another 10mins or until cheese is bubbly throughout.Sprinkle remaining tomatoes on top. Serve with club cracker or tortilla chips.
