4 lbs. bottom round roast
2 T unsalted butter
3 T olive oil
1/2 c cognac or sherry
2 c beef stock
red wine (chianti is good)

Directions:
Directions:
Rub meat with salt and pepper. Heat butter and olive oil on high heat. Brown all sides of roast. Add Cognac or sherry and flame (I don't know if it does anything, but it looks impressive) Add total of 3 cups of red wine and beef broth. Keep adding wine so there is at least one cup liquid. Simmer over low heat for a long time--if you try and shred it with a fork and it won't shred, don't panic, keep cooking it. Serve with buns or on toast.
