"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 Asparagus bunch 2 large cloves of garlic 4 tbsp. salted butter
Break bottom 1 inch of asparagus off and throw away. Dice garlic. Place butter and garlic into medium size frying pan. Simmer butter and garlic until garlic begins to turn golden brown. Add asparagus and spread out so that it forms a single layer across the pan. Keep covered but turn asparagus occasionally until stalks are soft and flimsy.
I cook the asparagus until the stalks are extremely soft, but some prefer a more crisp stalk so you can decrease cook time.
