3 large eggs
2 cups sugar
1 cup vegetable oil
2 tsp. vanilla extract
2 3/4 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
4 cups peeled, chopped apple
1 cup chopped pecans

Directions:
Directions:
Beat eggs at medium speed with an electric mixer until thick and pale. Gradually add sugar, beating until blended. Add oil and vanilla. Beat at low speed until blended. Combine flour and next three ingredients. Add to beaten mixture, stirring until blended. Stir in apple and pecans. Pour batter into a greased and floured 10-inch tube pan. Bake at 350 for 1 hour and 25 minutes or until toothpick comes out clean. Cool cake in pan on wire rack five minutes. Remove from pan and cool completely.
