1 pkg. lemon Jello
6 TB sugar
1 cup boiling water
3/4 cup pineapple juice
1 (8 oz) pkg. cream cheese
3/4 cup crushed pineapple
3 cups green & red Jello cubes
1 (8 oz) Cool Whip

Directions:
Directions:
Mix lemon Jello with sugar and boiling water. Stir until dissolved. Add pineapple juice. Chill until thick and syrupy but not set. Cream the cream cheese until smooth. Fold into thickened mixture. Add pineapple and Jello cubes. Carefully fold in Cool Whip.

Green and Red Jello cubes should be made the day before using 1 cup hot water and 1/2 cup cold. Pour into square pans. When ready to use, cut into cubes. Quickly dip pans in hot water to loosen cubes.

** Use different colors of Jello for different holidays.
