1 c. softened butter or margarine
1 c. softened vegetable shortening
2 c. brown sugar
2 c. white sugar
4 eggs 1 T. vanilla
4 c. flour
2 t. baking powder
2 t. baking soda
2 c. oatmeal
1 c. coconut
1 c. chocolate chips
2 c. corn flakes

Directions:
Directions:
Blend the butter/margarine and shortening together, then add both sugars, the eggs and vanilla. Sift in the flour, baking powder and baking soda and combine thoroughly. Stir in the oatmeal, coconut, choc. chips and corn flakes.
If you like BIG cookies, drop onto a cookie sheet with a small ice cream scoop and bake at 300 degrees for about 25 minutes. If you like regular size cookies, drop from a tablespoon and bake about 10 minutes or until done. Regardless of the size, know that these cookies spread out as they bake, so leave room around each cookie.

These cookies are crisp and delicious, and can often be found hanging out in my cookie jar. Kids and grandkids all like them. Sometimes I bake batches to give away at Christmas.
