2 med. onions, sliced
2 cloves garlic, minced
1/4 c. olive oil
1 15-oz. can diced tomatoes, undrained
2 med. zucchinis, sliced
1/4 tsp. each salt and pepper

Directions:
Directions:
Place onions garlic and oil in a large skillet. Saute until onions are transparent. Add tomatoes. Slice zucchini into 3/4-inch slices. Add to skillet. Season with salt and pepper. Cook uncovered about 10 minutes or until liquid is reduced and zucchini is crisp.
