2 T butter
1-1/2 cups sliced brown onion
1 T flour
1 cup chicken broth
1 cup apple juice
2 tsp lemon juice
1/2 tsp salt
6 small to med potatoes
1-1/2 lbs cooked ham
2 red apples

Directions:
Directions:
In a large covered sauce pot, melt the butter and saute onion until golden brown. Stir in flour and slowly add the chicken broth, apple juice, lemon juice and salt. Stir until it slightly thickens. Wash, but do not peel the potatoes - cut into large chunks. Cut the ham into 3/4" cubes. Add the potatoes and ham and bring mixture to a boil. Cover and lower heat to a simmer and cook for 15 minutes. Peel, core and cut the apples into large chunks. Add the apples to the pot and simmer another 15-20 minutes. Cook until potatoes and apples are tender. Stir occasionally.
