Ingredients:  
1 small onion, chopped
1/2 stick oleo or butter, melted
4 TB flour
2 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. paprika
1/4 tsp pepper
2 cup milk
8 oz. pkg. American processed cheese
6-8 med. sized potatoes, peeled & diced small

Directions:
Directions:
Saute onion in butter until tender. Remove from heat. Stir in seasonings and slowly add milk. Cook, stirring constantly, over low-med. heat until it thickens and boils one minute. Cut cheese into small pieces and stir with potatoes into sauce. Put into buttered (I used Pam) 8 cup baking dish or casserole. Bake at 350 for 45-60 min. or until potatoes are tender.

I used Kraft singles for the cheese, but I'm sure Velveeta would be fine too.
