2 lb. boneless skinless chicken breasts, thawed
1 c. instant mashed potato flakes
1/2 c. grated Parmesan cheese
2 egg whites (from grade A large egg)
1/2 c. water
salt and pepper

Directions:
Directions:
1. Preheat oven to 375F. Grease a 9" x 13" baking dish. In a wide, shallow bowl or pie pan combine all dry ingredients; mashed potato flakes, grated Parmesan cheese and salt and pepper to taste. Mix well.
2. Take another shallow bowl and combine egg whites and water; beat with whisk until blended well. Dip thawed chicken breasts in the egg and water mixture making sure that all parts of the chicken breast are wet with the mixture; roll in potato and cheese mixture until thoroughly coated. Place in pan.
3. Repeat coating each piece of chicken and placing in pan until all chicken has been coated. Bake uncovered on middle rack of oven until chicken is completely cooked. If using a meat thermometer, proper temperature of the center of the thickest part of the chicken should be 180 to 185.
4. Cheesy potato crust should be crispy on top with a layer or cheesy mashed potatoes under the chicken.
