1 lb. ground beef, 6 medium zucchini, 1/2 c. chopped onion, 2 T. margarine, 1/2 c. saltine cracker crumbs, 1 tsp.. salt
1/8 tsp.. pepper, 1/8 tsp.. oregano, 1/4 c. margarine, 1/4 c. flour, 1 tsp.. salt, 1/4 tsp.. pepper, 2 c. milk, 1 c. grated cheddar cheese

Wash zucchini squash and cut off ends. Cook whole zucchini in boiling sated water about 8 minutes. Drain and slice into 1/2 inch slices. Cook ground beef and onion in margarine, Pour off drippings. Stir in crumbs, salt, pepper, and oregano. Remove from heat.
Melt 1/4 c. margarine in saucepan. Stir in flour, salt and pepper. Add milk stirring constantly until thickened. Add cheese and sir until melted. Place half of zucchini slices in bottom of a greased 2 quart casserole or baking dish. Add half of bean mixture, them half of cheese mixture or sauce. Repeat layers. Bake in 350 oven for 25 minutes.
