200g pkt of diced dried apricots
cup of sultanas (optional)
1 cup sugar
1 cup boiling water
1 tablespoon of butter or margarine
1 egg (beaten)
2 cups SR flour

Directions:
Directions:
Put apricots, sultanas, sugar & butter in a bowl. Add boiling water and mix well. Add beaten egg and then SR flour. Mix together thoroughly.
The mixture is usually quite runny. Bake in a moderate oven for approx 45 mins or until a skewer inserted into cake comes out clean.

This cake is lovely and moist and very easy and quick to make and is low in fat. No need to ice.
