1 pack of beef ox tail ( about 2 lbs)
1 cup carrots
cup onions
1 cup potatoes
cup celery
2 12 oz. cans of tomatoes (petite diced)
Salt & pepper to taste
water

Directions:
Directions:
In a stock pot, cook beef ox tail in about 1 quart water until tender. Once meat is tender, add tomatoes, onions, carrots and celery and cook until done or tender. Add potatoes last because they will get mushy if cooked too long. Cook until potatoes prick with a fork. Taste. Add salt or pepper and more water if necessary.

Serve with toast, crackers, corn bread or biscuits
