2 c. biscuit and baking mix
2/3 c. milk
1 lb. sausage (room temperature)
1 c. sharp cheddar, grated (optional)

Directions:
Directions:
Mix baking mix and milk with a fork. Place on floured surface, kneading slightly. Roll into 12X18 inch rectangle. Spread sausage over dough. (Wet hands help.) Leave 1/2 inch margin on the two opposite 18 inch sides. Sprinkle with cheese if desired. Roll long side. Refrigerate 1 hour or overnight. (Wrap in plastic wrap to keep from drying out.) You may want to put in freezer 30 minutes before slicing (it helps). Slice into 1/4 inch slices. Place on cookie sheet sprayed with cooking spray. Bake 25-30 minutes at 350.
