18 Corn Tortillas, 5 cups cooked shredded Chicken, 1 cup chopped Onion, 5 cups shredded Cheddar Cheese, 3 cups shredded Monterey Jack Cheese

Directions:
Directions:
Soften tortillas 6 at a time in microwave for only about 45 second-1 minute. Dip them into warm enchilada sauce that is sitting on stove top in shallow 12 " fry pan. Lay onto cutting board. On 1/3 narrow strip put chicken, onions on top of that and then about 1 1/2 T. cheeses that have been mixed together. Roll up. Put into a pam'd 13 X 9 pan. When pan is full of enchilada's top with remaining cheese. Cover with foil and bake until cheese is melted. Serve with sour cream and salsa.

I sometimes omit the chicken and put a little refried beans in each tortilla with the onions and cheeses. Or do it real plain and just fill each tortilla with cheese and onion.
