3 tbsp. sherry wine vinegar
1 tbsp. lemon juice
1 tsp. honey-Dijon mustard
1/2 cup olive oil
1/2 cup chopped walnuts
3/4 lb spinach, stems removed, torn into bite-sized pieces
2 heads Belgian endive, cored and thinly sliced
1 firm but ripe pear, peeled, cored, and sliced
1/2 cup crumbled Gorgonzola cheese

Directions:
Directions:
Preheat oven to 350 degrees. In a small bowl, whisk together vinegar, lemon juice, and mustard. Slowly whisk in the olive oil until incorporated. Taste and adjust the seasonings.

Spread walnuts on a baking sheet and toast in the oven until lightly browned.

Combine the spinach, endive, pear slices, and toasted walnuts. Sprinkle with the Gorgonzola.

To serve, drizzle the vinaigrette over the salad and toss to mix well. Best if assembled right before serving.
