2 medium onions, chopped fine
3 potatoes, peeled and chopped into 1 inch chunks
1 15 oz can diced tomatoes
3 T cooking oil
2 chicken breasts, cut into 1/2 inch pieces
1/3 jar Patak's hot curry paste
1 cup water

Directions:
Directions:
In a wok or a kettle, cook the onions and chicken together in the oil until the chicken is just white and the onions are translucent to slightly brown. Add the potatoes, tomatoes, curry paste, and water and mix thoroughly, bringing it to a boil. Reduce heat and let simmer for an hour. Serve with Basmati rice.

If you like it hot, this is for you! If you don't, substitute with Patak's mild curry paste. Either way, get ready for a flavor and aroma explosion in your house. These pastes are available at Woodman's stores in the international food aisle.
