1 medium size salmon fillet (skin on)
1/2 c. maple syrup (or you can substitute sugar)
1/4 c. salt
1/2 c fresh dill weed
1/4 c. lemon juice
1/4 c. brandy

Directions:
Directions:
Spread the maple syrup (or sugar) on the salmon fillet, then sprinkle salt, dill weed, lemon juice and brandy over. Wrap in plastic wrap, place a weight on top. Keep in the refrigerator and turn every 12 hours. Do this for at least 24 hours before cutting
