12 medium Baking potatoes
1/2 cup Margarine or butter, melted
2 cups shredded Cheddar or Monterey Jack (8 oz)
Seasoned salt
Salsa
Sliced Green onions
Sour cream

Directions:
Directions:
Using a fork, poke holes into washed potatoes. Bake in a 425 oven for 1 hr or till tender. 1/4 lengthwise. Scoop out the insides* leaving 1/2 inch thick skins. Brush both sides of potato skins with margarine. Place, cut side up, on a large baking sheet. for 10 - 15 min. Sprinkle with cheese and seasoned salt, if desired. Bake about 2 min more until cheese melts. Serve with green onion, salsa, and sour cream, if desired. Makes 48 appetizers.

(*Reserve & use as mashed potatoes. Freeze in 1/2 cup scoops, covered or in freezer bags and use when needing a portion of potatoes. Microwave to serve.)
