1 (15 ounce) packaged pie crust
1 tablespoon butter or margarine
1 - 8 ounce fresh mushrooms, chopped
1 roasted red bell pepper, chopped
2 tablespoons apple juice or port wine
1 cup half and half
3 large eggs
1/2 teaspoon salt
1/4 to 1/2 teaspoon black pepper
1/8 teaspoon red pepper
1 cup chopped fresh spinach
1 - 5 ounce package shredded swiss cheese

Directions:

Preheat oven to 400F.
Unfold pie crust and place on a lightly floured surface. Roll out and bake at 400F for 8 minutes - then cool.

Melt butter in a large skillet over high heat. Add mushrooms and bell pepper. Saute for 7-10 minutes. Stir in port or apple juice, cook until liquid is absorbed.

Whisk together half & half, eggs, salt, pepper and red pepper. Stir in mushroom mixture, spinach and cheese. Pour in crust.

Bake on lowest oven rack at 400F for 40 minutes or until set. Let stand 10 minutes.
