Shrimp Orzo Pasta Recipe

1 box Orzo pasta
1 bag frozen shrimp, peeled w/ tail. (I thaw them and remove the tail.)
2 T olive oil
2 T butter or margarine
3 T capers
2 cloves minced garlic
3/4 c. julienned sundried tomatoes
1/2 c. white wine
Lemon juice from 1/2 lemon
Salt and pepper to taste
1/2 c. green onions chopped
1/2-3/4 c. crumbled feta cheese

Cook pasta according to directions and drain.

Heat oil and melt butter in pan. Add garlic, capers, and sundried tomatoes. Cook for 2-3 minutes on medium heat. Add shrimp and cook until almost done. Turn up heat and add wine. Cook until shrimp are done then sprinkle with lemon juice and salt and pepper to taste.

Pour mixture over pasta and stir. Top with feta cheese and green onion. Serve warm or chilled.

I threw this together for Melissa's baby shower and it was a hit. I love experimenting with garlic, sundried tomatoes, and capers in different dishes.
