1 sweet onion, sliced thin
1-2 cucumbers, sliced thin
Course salt
Rice vinegar

Directions:
Directions:
Slice the onion & cucumbers and layer in a bowl, sprinkling each layer with salt. Add rice vinegar to taste & cover with ice.

Refrigerate for at least 1 hour for the best taste.

Remove ice & drain or serve with a slotted spoon.

***You can also add quartered cherry tomatoes for extra flavor & color!
