1-3/4 cups milk
3/4 cup sugar
1/2 cup Bisquick
4 eggs
rind of 1/2 orange (optional)
1/4 cup melted butter
1-1/2 tsp. vanilla
1 cup coconut

Directions:
Directions:
1. Preheat oven to 350. Grease 9-inch pie plate.
2. Combine milk, sugar, bisquick, eggs, orange rind, butter and vanilla in blender. Cover and blend for 3 minutes.
3. Pour into pie plate. Let stand 5 minutes. Sprinkle with coconut.
4. Bake for 40 minutes.
