6 med. potatoes, peeled
1 c. chopped celery
1 med. onion, peeled (or 6 med. green onions, peeled use stalks)
2 tsp. parsley flakes or chopped raw parsley
1 c. shredded cheddar cheese
6 c. whole milk
1 stick margarine or butter
salt and pepper to taste

Directions:
Directions:
Cook potatoes, onion, celery and parsley in small amount of water. Slowly add margarine and milk a little at a time. Turn off heat so that milk will not scald. Add salt and pepper. Garnish with cheddar as you serve; or mix into soup before serving.
