1 lb chicken breasts, cut into 1/2 cubes
6 oz pkg frozen (or fresh) peapods
1 c. whole or slivered almonds.

Mix in bowl:
1 tsp. ground ginger
2 tsp. sugar (opt)
1 Tbsp. cornstarch
1/2 c. water
3 Tbsp. soy sauce

Directions:
Directions:
In skillet, heat 1 Tbsp. oil at medium heat, add almonds, stir and cook 3 minutes, add chicken and cook just until meat turns white. Pour in bowl mixture liquid and cook until sauce thickens (stirring constantly). Add peapods. Stir fry until hot and glazed. Serve with rice.
(I like to serve this with a tossed salad with mandarin oranges and frozen egg rolls.)
