2 c. bulgur 2 c. very hot water 1 cucumber, chopped 2 sm. tomatoes, chopped 8 green onions, sliced ½ c. fresh mint, chopped 2 c. fresh parsley, chopped 1 clove garlic, minced
Dressing: ½ c. fresh lemon juice ¾ c. olive oil 1 Tbsp. pepper 2 tsp. salt
Soak bulgur in hot water until all absorbed (about 30 minutes). Drain excess water and squeeze dry. Combine salad ingredients including bulgur. Mix dressing ingredients and stir into salad mix. Let sit in fridge 8 hours or overnight. Serve chilled. Yield: 8 cups
