1 (32 oz.) pkg. frozen shredded hash brown potatoes
1/2 cup chopped onions
water
2 Tbsp. butter
6 oz. sour cream
1/2 lb. Velveeta cheese, cut in small cubes
Salt and ground pepper to taste
Milk (optional)
4 strips bacon, cooked crisp and crumbled (optional)

Directions:
Directions:
Place potatoes and onions in a large pan and barely cover with water. Cook until potatoes are tender, do not drain. Mash with a potato masher to desired consistency. Add butter. Add sour cream. Add Velveeta. Add salt and pepper. Heat until cheese is melted. Do not boil. If mixture is too thick add milk to desired consistency. Serve with crumbled bacon on top of each serving.
