4 (10 oz.) steaks, cut 1 inch thick
1 tbsp. freshly ground pepper
1 tbsp. Cajun seasoning3
1/2 tsp. garlic powder
2 tsp. olive oil


2 tbsp. olive oil
2 onions, diced
2 (4 oz.) cans chopped green chilies
1 tsp. dry oregano
1 tsp. chopped fresh basil
3/4 c. bread crumbs, plain

Remove excess fat from steak. Cut deep horizontal pockets into each steak. leaving 1/2 inch on sides and ends.
Combine pepper, Cajun seasoning and garlic powder in a medium bowl; mix well. Rub on steak. Refrigerate steak in resealable plastic bag with olive oil overnight.
For stuffing: Heat oil in medium skillet over high heat until hot. Add onions and saute' until tender; add chiles and spices. Simmer 5 minutes over low heat. Add bread crumbs; combine well to make a thick paste.
Heat grill. Stuff steaks with 2 tbsp. chile stuffing. Place steaks on grill over medium heat until desired doneness.
