4 c. Corn Chex – rolled fine (I put them in a bag and let my kids mash)
2/3 c. brown sugar
½ c. margarine or butter (melted)
¾ c. coconut
½ gallon neopolitan ice cream (block style, cut in ½ inch wide slices)

Directions:
Directions:
Stir corn chex, brown sugar, coconut and margarine in medium bowl. Spread 1/3-1/2 of mixture in bottom of 13x9 pan. Pat down with fork. Add ice cream slices, positioning evenly to cover the whole pan. Spread remaining cereal mixture over the top and gently tap down. Cover and freeze.

This is an old recipe from my husband’s Grandmother. We especially love this treat during the summer.
