Scrub sweet potatoes. Cut into chunks – leaving the skin on. Toss with olive oil, crushed black pepper and sea salt. Place in baking dish. Bake in a 400 degree oven for approx. 45 minutes or until soft. You can eat the skin – it’s full of great vitamins. Delicious!
