2 Tbsp. butter
½ c. onion - diced
¼ c. green pepper - chopped
1 garlic clove - minced
1 large tomato – chopped
1 c. chicken broth
2 – 3 c. water
1 c. uncooked rice
2 c. cooked chicken
Black Pepper

In a large sauce pan, melt butter. Sauté onion, green pepper and garlic. Stir in tomato, broth, water, rice, chicken and seasonings. Bring to a boil – reduce heat and simmer 15 minutes or until the rice is tender. Enjoy! Serves 6
