1 c. sugar
c. orange juice (about 1 orange)
c. butter
c. sour cream
1 c. sugar
2 c. flour, sifted
1 tsp. salt
1 tsp. orange rind, grated
c. raisins, chopped and softened in apple juice or water
c. nuts, chopped

Directions:
Directions:
Preheat oven to 375 degrees. Grease 36 mini muffin cups. Heat cup apple juice or water in sauce pan and heat to boiling. Add chopped raisins and cook just for a minute to soften. Strain raisins and set aside.

Mix 1 c. sugar and the orange juice together; set aside for dipping after muffins are baked.

Cream butter and 1 c. sugar; add sour cream alternately with dry ingredients, mixing just until moistened. Fold in orange rind, nuts and raisins (batter will be stiff).

Bake 10-12 minutes. While still warm, dip tops of muffins in sugar and orange juice mixture.
