1 c. grated carrot
3 c. shredded cabbage (center stalks removed)
1 c. diced green apple
c. peanuts
c. sunflower seeds
c. raisins
c. finely sliced red bell peppers

Vinaigrette Dressing:
2 tsp. dijon mustard
1 tsp. dried tarragon leaves
2 garlic cloves, minced
c. olive oil
1 Tbsp. honey
Ground black pepper to taste
c. vinegar (apple cider, balsamic, or white-wine vinegar)

Place all ingredients, except vinegar, in a bowl and mix well. Then slowly add vinegar to taste, maybe a little more or less according to your preference. Toss all ingredients with the vinaigrette dressing. You can add less dressing if you want a lighter flavor.
