Dressing: 1/2 c. sugar 1/3 c. lemon juice 2 tsp. finely chopped onion (or dried) 1 tsp. Dijon mustard 1/2 tsp.salt 2/3 c. oil 1 Tbsp. poppy seed
Salad: 1 large head romaine 1 c. shredded Swiss cheese or cooked wild rice 1 c. cashews 1/4 c. craisins 1 apple cubed 1 pear cubed (I don't usually add this because I don't have it) 2 c. cooked chicken cut-up (optional)
Combine dressing ingredients and toss with salad ingredients.
