Italian Meat Loaf Recipe

2 lbs of hamburger
1 egg
3/4 c. crushed saltines

1 can herb (Italian) tomato sauce
1/2 tsp. oregano
1/8 tsp. pepper
2 c. mozzarella cheese

Directions:
Directions:
Mix beef, egg, cracker crumbs, 1/3 cup of tomato sauce and seasonings in a bowl.

Lay out a large rectangle of Saran wrap on your counter. Spread the meat mixture on top of the Saran and press the meat flat into a rectangular form. Sprinkle the cheese on top of the meat, leaving it 1 inch clear of the sides. Lift one side of the Saran up and roll the meat by pulling back on the Saran, making a log shape. Once in a roll, seal the edges so the cheese does not ooze out. Transfer the meatloaf, seam side down, into a pan sprayed with Pam.

Bake at 350 for 1 hour and 15 minutes. Take out the pan and pour the rest of the tomato sauce on top. Bake 15 minutes more. Slice to serve and top with extra sauce.
