4 - 6 bone in chicken breasts
6 potatoes peeled, cut length wise and into boats
6 garlic cloves cut in half
2 cans chicken broth (low sodium)
1/2 c. olive oil
1/2 c. fresh lemon juice
2 tsp. dried oregano

Directions:
Directions:
Preheat oven to 375. Arrange chicken, potatoes and garlic in a roasting pan. Salt and pepper them. Pour broth over the chicken and potatoes. Whisk the oil, lemon juice, and oregano together. Pour over chicken and potatoes. Cook 1 hour and 15 minutes. Baste periodically.
