1/2 c. onion
3/4 c. breada crumbs
1/3 c. red pepper
2/3 c. salsa
1 tsp. chili powder
1 tsp. oregeno
1/2 tsp. cumin
6 slices crumbled bacon
1 TB. chipotle chili in adobo (opt.)
2 eggs
1 1/2 lb. ground turkey
3/4 c. cheese

Directions:
Directions:
Preheat oven to 350. Saute onion, bell pepper, chili powder, cumin, and garlic. Stir in chilies cook 30 sec. and cool. Combine onion mixture, turkey, bread crumbs, 1/3 c salsa, oregano, bacon and egg in a bowl. Spray a loaf pan with non-stick. Press 1/2 turkey mixture in loaf pan. Sprinkle with cheese. Place rest of turkey mixture on cheese. Pour rest of salsa on top sprinkle with more cheese if desired. Bake for 1 1/2 hours.

My mom never made meatloaf growing up. I think it's because she never found a good recipe like this one. I usually serve it with Spanish rice and refried beans.
