1/2 lb mild (or hot) Italian sausage
1 1/2 tsp. minced garlic
1 Tbsp. minced shallots or onion
1 tsp. dried thyme
2 (16 oz) cans of chopped tomatoes (juices reserved)
1/2 tsp. Chinese chili paste
1/2 c. whipping cream
8 - 12 large shrimp (peeled and deveined)
8 oz penne pasta - cooked and drained
1/4 c. grated parmesan cheese

In a large skillet, brown the sausage and drain the fat (leave 1 tablespoon of fat). Place the sausage on a paper towel and set aside. In the same skillet, cook garlic, shallots and thyme. Add tomatoes, add the juice to thin if desired). Add chili paste, cream and reserve sausage. Simmer for about 10 minutes. Add shrimp. Cook on low heat until the shrimp are pink (about 5 minutes). Add pasta and toss gently. Sprinkle with parmesan and serve immediately.
